Thanksgiving is right around the corner! whether you're a dedicated Turkey lover or can’t go without the heavenly undertones of Honey Baked Ham, Nomadic wishes you a Happy Thanksgiving. Before you load up the car and head over to gorge on an impressive spread of baked goods, hearty casseroles and savory meats, we thought we’d let you in on our secret family recipe: Kim’s Butternut Squash Soup.
This Autumn Anomaly is packed full with robust seasonings that’ll make your dish a hit for years to come.
1 Butternut Squash Peeled, Cubed and Roasted at 495 (drizzle butter on the top and
cook for 30 minutes).
½ Medium Onion, (Chopped & Sautéed in butter until clear or slightly browned)
½ Tsp of Marjoram
½ Tsp of Cinnamon
½ Tsp of Nutmeg
¼ Tsp of Yellow Curry Powder
Mix all of the above ingredients in a food processor until smooth. Add ½ cup of cream cheese. Puree slightly into the mix. Add one can of Chicken Broth and cornstarch to thicken if desired. Right before serving add a swirl of half and half and a sprig of mint(optional).
